My new weekend brunch obsession is this egg sandwich with chorizo, avocado, red onion, jalapeño, cheese and salsa. I miss the El Camion food truck in Seattle. There is nothing comparable where I am in Florida, so I’ve had to improvise.
Instead of a recipe, I’m giving you a video of what I do, so that you can see the process and adapt it to your own kitchen and preferences.
You’ll need the best possible non-stick pan you own and a tortilla that is the same diameter as the pan.
